1. Make your Blackened Seasoning by combining 2 tbsp Smoked Paprika, 1 tbsp Cayenne Pepper, 1 tbsp Onion Powder, 1 tsp Black Pepper, 1 tsp Salt, 1/2 tsp Oregano, and 1/2 tsp Thyme.
2. Season your Chicken Legs generously with the Blackened Seasoning.
3. Using a 4-Burner Gas Grill, fill a Charcoal Tray with Charcoal Briquets and place it in place of the center grill grates.
4. Set the middle 2 burners to high and close the lid for 20 minutes to light the charcoal.
5. Add Wood Chunks to the charcoal and place the seasoned Chicken Legs on the outside grill grates.
6. Close the lid and smoke at 350°F until the internal temperature of the chicken reaches around 200°F.
7. While the chicken smokes, make your Alabama White Sauce: Combine 1 1/4 cups Mayonnaise, 2 tbsp Apple Cider Vinegar, 1 tbsp Dijon Mustard, 2 tsp Brown Sugar, 2 tsp Creamy Horseradish, 2 tsp Lemon Juice, 1 tsp Worcestershire Sauce, 1 tsp Cayenne Pepper, 1/2 tsp Garlic Powder, 1/2 tsp Onion Powder, 1/2 tsp Salt, and 1/2 tsp Black Pepper. Mix well and refrigerate.
8. Let the Chicken Legs cool slightly after cooking, then cover them in the prepared Alabama White Sauce and Enjoy!
