Learn how to make homemade sushi with a unique twist! This recipe features short-grain sushi rice, a sweet and tangy vinegar mixture, and a delicious filling of brisket-style pork belly, avocado, and pickled red onions, all wrapped in nori.
1. Rinse 3 cups of Short Grain Sushi Rice until the water runs clear, then strain and let it dry for 1 hour.
2. Add the 3 cups of strained Sushi Rice and 3 cups of Water to a rice cooker and cook.
3. While the rice cooks, prepare the Vinegar Mixture: combine 1/4 cup Japanese Rice Vinegar, 2 tbsp Sugar, and 1 tsp Salt. Microwave until the sugar and salt are dissolved.
4. Slice your Avocado and cut your Brisket Style Pork Belly into long pieces. (You can easily swap out the meat for anything you have on hand).
5. Once the rice is finished cooking, spread it out on a pan and slowly pour the Vinegar Mixture over the rice, tossing to combine.
6. Lay out a sheet of Nori, spread the Sushi Rice on it, indent with a sushi tool, and fill with your Brisket Style Pork Belly, Avocado, and Pickled Red Onions.
7. Close the nori, squeeze to form a roll, then slice.
8. Dip in your sauce of choice (e.g., Oakland Dust's Asian Bang BBQ Sauce) and Enjoy!
