Chorizo Grilled Cheese Sandwich w/ Chipotle Lime Crema

1. Make your Chipotle Lime Crema: Combine 2 cups Crema, 3 tbsp Adobo Sauce from a can of Chipotle Chilis, 2 tsp Smoked Paprika, 1/2 tsp Black Pepper, 1/2 tsp Salt, and 2 tbsp Lime Juice. Mix well.
2. Make an easy Smoked Paprika Butter for your bread: Combine 1 stick (approx. 1/4 lb) softened butter and 1 tbsp Smoked Paprika. Mix well.
3. Pre-heat a griddle to medium heat. The key to a crispy grilled cheese is not burning your bread.
4. Build your grilled cheese sandwich: Spread the Smoked Paprika Butter on slices of Sourdough Bread. Layer Oaxaca Cheese, Pork Chorizo, White Onion, and Cilantro between the buttered bread slices.
5. Cook until crispy, then flip and use a press or a spatula to press down.
6. Slice, generously cover in Chipotle Lime Crema, and Enjoy!
