Throwback Baby Back Ribs w/ Spicy Chimichurri Seasoning

Trim up the Ribs and use Chi Banero Spicy Mustard for the binder, then season generously with Rib Rub. Rest the ribs for about 15 minutes. Place them onto the grill (e.g., Gravity 980) at 225°F with Apple Wood Chunks and smoke for 3 hours, spraying occasionally with a mix of Water and Apple Cider Vinegar. After 3 hours, wrap the ribs with Butter, Honey, and Brown Sugar. Increase the grill temperature to 275°F and cook for another hour. Unwrap the ribs, sauce them, then dust with Spicy Chimichurri Seasoning. Place them back on the grill for 10 minutes more to tack up the sauce and seasoning.
